In the steep hills of Planadas, Tolima, Eduar Giraldo and his wife Diana Lorena are writing a new chapter in their family’s long history of coffee farming. Although Eduar bought his first plot of land at a young age, his focus shifted decisively toward high-quality production in 2020, driven by a desire to see his family’s hard work recognised on a global stage. His approach is one of constant learning; a recent trip to Brazil to study technical advancements has only deepened his commitment to precision at his farm, La Esperanza.

This Pink Bourbon lot is a perfect example of that technical evolution. Eduar employs a meticulous processing method where cherries are rested for 24 hours before being pulped without water and fermented in closed tanks for 55 hours. The beans are then slowly dried under shade and finished in a mechanical dryer to ensure perfect stability. It is a process that prioritises clarity and consistency, allowing the distinct character of the variety to shine through.
