At Finca Villa Betulia in Acevedo, Huila, producer Luis Aníbal Calderón has dedicated years to cultivating an ancient Ethiopian Heirloom variety. When seeds from the wild coffee forests of Yirgacheffe arrived in Colombia, Luis Aníbal carefully nurtured them to observe how they would adapt. His patient study successfully unlocked the potential of this plant, producing unique, elongated cherries with impressive resilience. To highlight their complex flavours, the ripest fruit undergoes a controlled 45-hour aerobic fermentation before moving to parabolic roof dryers. The cherries dry slowly for over three weeks, allowing the natural sugars to deeply permeate the beans. This meticulous natural process yields a rich, full-bodied cup, full of character and aromatic clarity.
