Jean Vilhena Faleiros farms Santa Monica in Ibiraci, in the Alta Mogiana region of Minas Gerais, and is held as one of the most respected specialty producers in Brazil. A lot of that reputation sits in what he has built on the farm: the largest expanse of African drying beds in the country, and fermentation facilities he can hold at a controlled temperature so the outcome is his decision rather than the weather's. He works without synthetic chemicals, and every lot runs to its own protocol, which is why two batches off the same farm can arrive as separate pieces of work rather than variations on a house style.

Whole beans or pre-ground?

Coffee deteriorates much faster once it is ground, making whole beans the ideal way to purchase coffee. If you don't have a grinder though, all good!
