After dedicating his career to coffee and winning Colombia's Cup of Excellence, Pergamino's Director of Coffee, Leo Henao, sought a new agricultural home closer to his family. When the opportunity arose to take over an estate in Antioquia with its own independent mill, Leo and his wife Jenny, Pergamino's Head of Quality Control, eagerly accepted. They renamed the property Finca El Jardín in honour of the ancient Greek philosopher Epicurus, reflecting their vision for the farm as a collaborative space where knowledge is freely shared. Drawing on his background in fermentation science, Leo uses the property to experiment with rare plants like this resilient Chiroso lot, an Ethiopian landrace variety that thrives in the local climate. By testing progressive cultivation and processing techniques on their own land, Leo and Jenny are able to pass their firsthand insights directly to a broader network of local producers, helping the entire community elevate their harvests.

Whole beans or pre-ground?

Coffee deteriorates much faster once it is ground, making whole beans the ideal way to purchase coffee. If you don't have a grinder though, all good!

Grind Guide

Whole Beans - not ground, you have your own grinder
Commercial Espresso - very fine for a commercial espresso machine
Home Espresso - quite fine for a domestic espresso machine
Stovetop - fine for percolator / moka pot
Aeropress - medium for Aeropress
Pour Over - medium for pour over
Plunger - coarse for plunger / french press
Batch Brewer - very coarse for Moccamaster and other batch brewers
