At La Divisa in Quindío, Sebastian Gomez and his team handpick only the ripest cherries before transporting them to Cofinet’s La Pradera processing centre. There, each lot undergoes meticulous sorting and a 30-hour underwater fermentation designed to bring clarity and depth to the cup. The coffee is then carefully washed using a closed-loop water system that filters and reuses water sustainably, before being dried slowly on raised beds to preserve complexity and freshness.

This Pink Bourbon lot is less than 100kg in total, and it showcases the balance that defines Sebastian’s approach: sweetness, structure, and a vibrant acidity that reflects both the variety and the care behind its production. The result is a refined, expressive coffee that captures the best of Colombia’s high-altitude terroir.
